Holistic. This is the word that repeatedly came to mind as I read through the Vegan Weight Loss Manifesto by Zuzana Fajkusova and Nikki Lefler. I found myself nodding in agreement over and over again as I read about their philosophy and approach to health and living. In short, this book is NOT about diet. It is also not about a quick weight loss fix. It’s not about depriving yourself and “cheat” days. This book is about lifestyle change and living life to the fullest.

Sometimes, the assignments may seem extreme. Well, it’s because they are extreme. But Zuzana and Nikki are always full of encouragement and helpful guidance. They are full of excellent tips to help keep you on track amidst this crazy junk-food ad laden world in which we live.

In addition to the book itself, their website, Active Vegetarian, is chock-full of information to help. Recipes, meal-plans, podcasts, work-out videos, and more. It is a treasure trove of plant-based living goodness at your finger tips. Each one of the eight weeks is broken down into easy bytes to mentally digest. There is a nutrition section, a fitness section, and a lifestyle section each with a corresponding assignment. The text of broken up with encouraging quotations and packed full of good information. It is worth noting that Zuzana and Nikki cite and provide foot notes to research and studies that support their advice from renowned authors and journals.

The advice that they give is full of common sense. Sometimes, it is hard to hear. As their title states, the authors are coaches. They don’t mince words. This type of lifestyle change is difficult, to be sure. But in the same breath, they offer encouragement and support as well as plenty of suggestions on how to gain more support in your individual life. They remind you that you are not alone!

Positive vibes permeate the book. Fortunately, the text is short; short but pithy. It is easy to read and reread, which will be inevitable to everyone working through each week. This book, however, is also wonderful just as a cookbook. Whether or not you are vegetarian, fully vegan, or simply just wanting to consuming less animal products for whatever reasons you may have, this book is worth picking up.

The recipes are varied and delicious. I have made several of them and each one has been wonderful. One thing I really like about this cookbook is that it really does emphasize the whole food plant-based diet (WFPB), which does differ from veganism in the sense that those who follow a WFPB diet tend to not eat highly processed foods that happen to be vegan. As they state in the book, even Oreos are vegan. Not exactly a what I would call a whole food, though. Right?

I have no doubt that I will come back to this cookbook and use it often. The recipes are beautifully and enticingly photographed. After all of the recipes, in part four, is a very useful section that breaks down the “vegan kitchen”. It contains tips on shopping and a chart on soaking and sprouting grains. Very useful information to have at you finger tips!

I have to say, that personally, I felt validated as I read through this manifesto. Although I don’t follow their advice to a T, I have already developed many of the habits on my own through that past few years. It was taken some time for me. I didn’t do it in eight weeks, that’s for sure. This book would have been a great help when I started eating a more plant-based diet.

Vegan Weight Loss Manifesto: An 8-Week Plan to Change Your Mindset, Lose Weight and Thrive

Here is one of the recipes that I made. I didn’t make it in the slow cooker. It was quite simple on the stove top. I just simply blended it when the turnip was soft. It probably only took about a half an hour or forty-five minutes to cook.

Slow Cooker Turnip & Fennel Soup

Ingredients

  • 1 tablespoon coconut oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, minced (be careful, fresh ginger is quite strong and you can easily add too much)
  • ½ tablespoon fennel seeds
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 3 cups filtered water
  • 1 large yellow turnip, peeled and cubed
  • 1 bulb fresh fennel, chopped and divided
  • ½ teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cardamom
  • 1 can full-fat coconut milk
  • ½ cup hemp seeds, for garnish
  • ½ cup fresh cilantro, finely chopped, for garnish

Directions

  1. In a skillet, melt the oil over medium heat. Add the onion and cook, stirring until softened, about three minutes. Add the garlic, ginger, fennel seeds and salt and pepper and stir until the garlic is fragrant, about two to three minutes.
  2. Transfer to a slow cooker. Stir in the filtered water. Add the turnip, fennel, cumin, cinnamon and cardamom to the slow cooler, stirring so all of the ingredients are well coated with the spices.
  3. Cover and cook on low for six hours or on high for three hours, until the turnip is tender.
  4. Stir in the coconut milk and puree the soup using an immersion blender in the slow cooker, or transfer the soup to a high-speed blender and blend in batches if necessary. Season to taste with sea salt.
  5. Ladle the soup into bowls and garnish with hemp seeds and chopped cilantro.
