It’s here, friends. Holiday season is upon us, and you know what that means: food. SO much delicious food. I love Christmas and New Year’s, but I especially love Thanksgiving. It’s the perfect kick-off to holiday season. You don’t have to worry about buying gifts or putting up a bazillion twinkle light. This holiday is all about the food. (And gratitude, of course!)

I love planning out Thanksgiving dinner. I love the traditional dishes and coming up with new dishes, too. Oh, and also-NEWS FLASH-you don’t have to feel sorry for us vegetarians and vegans on Thanksgiving. There is plenty of delicious non-meat food for us to gorge ourselves on (mashed potatoes, stuffing, cranberries, squash, sweet potatoes, dinner rolls, not to mention all of the pies!). So don’t you worry about us. 😉

That being said…what about breakfast? I mean, we should really eat at least two meals on that day, right? I think so. Usually, the kitchen is so packed with preparations for the main meal that it’s smart to keep breakfast simple. These little muffins are a perfect morning snack that are in perfect alignment with Thanksgiving flavors. And a little indulgent, perhaps. (Where, exactly, is the line separating muffins from cupcakes…? Or perhaps we can just not think about that right now.)

Fifteen minutes is the bake time on these muffins. If you are lucky and have two ovens, this shouldn’t be a problem. Otherwise, these are totally worth getting up a bit earlier for and baking before that precious oven real estate is taken up by larger dinner dishes.

Vegan Pumpkin Spice Muffins w/ Maple Pecan Glaze

Ingredients

  • 2 cups all purpose white flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons pumpkin pie spice
  • ¾ cup brown sugar
  • 2 tablespoons canola oil
  • 2 flax seed eggs (see note)
  • ½ can of pumpkin (about 1 cup)
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened vanilla almond milk
  • glaze
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 1 tablespoon unsweetened vanilla almond milk
  • 1 teaspoon vanilla extract
  • ½ cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F. Grease muffin tins. (Recipe makes 12 muffins.)
  2. In a mixing bowl, combine flour, baking powder, salt, and pumpkin spice.
  3. In a separate bowl, combine brown sugar, oil, flax eggs, pumpkin, vanilla, and milk.
  4. Gentled fold wet mixture into the dry mixture until fully combined. Distribute batter evenly into muffin tins.
  5. Bake until a knife comes out clean from center of muffin, about 15 minutes.
  6. Let cool completely.
  7. While muffins are cooling, prep the glaze. Whisk together powdered sugar, maple syrup, milk, and vanilla extract. Be sure not to add too much liquid otherwise the glaze will be too runny.
  8. Gently spoon icing over cooled muffins. Immediately sprinkle with chopped pecans so they stick to the icing before it gets too dry.
  9. Enjoy!
