Most of the time, I’m not much for baking in the summer time. Who wants to turn on the oven when it’s hot and sunny outside? I’d rather grab any fresh veg I can get and head outside for a picnic! But occasionally (ok, it can feel often), it doesn’t actually get that warm here during summers in Minnesota.

In fact, as I sit here and type this now, it is a mere 66 degrees F out right now. For me, it’s not even warm enough to have the windows open. I can practically feel September around the corner, waiting to change colors of leaves and slowly bring cooler and cooler weather.

On one hand, I am excited. I like season changes. They excite me. I’m never one who minded things changing. I tend to be someone who looks and plans ahead and (usually?) feel prepared for when change comes. (Freezer meals prepped for when baby came was a A++ decision.) September brings the start of the school year (nerd alert-I always loved school), leaves changing color, and pumpkin spiced everything. We can wait for all of that just a little while longer, right?

Right.

These vegan pineapple coconut macadamia muffins were perfect for summer baking. They taste like sunshine! Hold onto the summer just a little while longer, you guys. It is so fleeting around here. Soak it up while you still can.

Ingredients

  • ¾ cup all purpose flour
  • 1 cup whole wheat pastry flour
  • ½ cup + 2 Tablespoons brown sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1/8 teaspoon salt
  • 2 ground flax eggs (or regular eggs for non-vegan version)
  • ¾ cup milk-I use almond milk
  • 4 tablespoons coconut oil, melted
  • ½ teaspoon vanilla extract
  • ¼ cup unsweetened coconut flakes, separated
  • ½ cup chopped macadamia nuts
  • 1 cup chopped pineapple, frozen or fresh

Directions

  1. Prep ground flax eggs. (See above for link to directions.)
  2. Mix together flours, ½ cup brown sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, stir together ground flax eggs, milk, 3 tablespoons melted coconut oil, and vanilla extract.
  4. Gently stir wet mixture into dry mixture until just mixed.
  5. Fold in half of coconut flakes, macadamia nuts, and pineapple. Pour evenly into muffins tins.
  6. Stir together remaining tablespoon coconut oil, 2 tablespoons brown sugar, and remaining half of coconut flakes. Sprinkle mixture on tops of muffins.
  7. Place in oven and bake about 20-25 minutes or until knife comes out clean.
  8. Remove muffin tin from oven and place on cooling racks. Let cool completely before popping muffins out of tins.
  9. Enjoy!
