I am trying to remember when I first came across the concept of a “bowl” meal. They are called lots of things: Buddha bowl, power bowl, bliss bowl…choose your favorite. I like bliss bowl, myself. I think I first heard about them through one of my sisters while I was still living in Japan. I didn’t try it yet, though. Then I moved back to the states and I started to see them on some restaurant menus. Finally, I thought to myself, why am I not making these for myself?

So here we go. Making bliss bowls is simple. Think of a handful of foods that will taste great together, prep them, throw them in a bowl, and eat! When I go about creating a new one, I choose a grain, at least two veggies, beans or tofu, nuts and/or seeds, and possibly a fruit. Depending on how I cook the veggies and grains, I may or may not use a dressing. To me, bowl meals like these are sort of like super salads-only they are way better!

When you make your own, look at what veggies and fruits are in season. Assess what you have on hand before rushing to the store. Just the other night I threw together something using foods that I just happened to have on hand and it was so good that I wrote it down so I could remember how to make it again! The more you experiment with flavors and cooking, the better you will get at creating bowls that you love.

If you aren’t someone who has the time, energy, or ambition to come up with your own bowls, there are zillions of cook books and blogs out there that are loaded with awesome ideas and delicious recipes. I highly recommend starting with this cookbook from Lukas Volger. I have made several of the recipes within and they are all delicious!

Ingredients

  • 2 sweet potatoes, peeled and diced
  • 1 pound Brussels sprouts, rinsed and halved
  • 1 cup wild rice, cooked according to directions
  • 1 cups dry black eyed peas (about 2 cooked)
  • 1 avocado, sliced
  • pepitas for garnish
  • paprika
  • chili powder
  • olive oil
  • dressing
  • ¼ cup unsalted tahini
  • ¼ teaspoon salt, more or less to taste
  • 1 teaspoon toasted sesame oil
  • ¼ teaspoon paprika
  • ¼ cup water

Directions

  1. Pre-heat oven to 400 F.
  2. Prep sweet potatoes and Brussels sprouts. Place sweet potatoes on a baking sheet and the Brussels sprouts on a separate baking sheet. Drizzle with olive oil and sprinkle with salt, paprika, and chili powder. Place in oven to roast, stirring and rotating every 10-15 minutes. The Brussels sprouts should take about 30 minutes, the sweet potatoes about 45.
  3. Prep wild rice and black eyed peas according to directions. I cooked them in broth for extra flavor.
  4. For dressing, whisk together all ingredients.
  5. Assemble all prepped ingredients in bowls. Makes 3-4 large servings.
