Well, here we are. Already nearly a month has passed since this year’s summer solstice. I remember being a child and noticing that the sunlight changed throughout the year, but not having any understanding as to why. Science enlightened me as I grew up (Yay, science!) and even though I prefer the summer solstice to the winter, I have a great appreciation for the tides of the all of the seasons.

Some friends of ours always like to throw a winter solstice bonfire. Which is definitely fun, but I still prefer the summer solstice. Perhaps this has something to do with the fact that I am a photographer and I am infatuated with light-especially sunlight. Who knows. Someday, I would love to experience the summer and winter solstices from a place like Norway. I can’t imagine 24 hours of sunlight or the lack thereof.

My in-laws spent a year living in Norway when they were newlyweds. They told me that in the middle of the winter, when there was little or no sunlight, that every time they went grocery shopping a bottle of vitamin D supplements were always given to them at the checkout.

Vitamin D is so odd. The only vitamin that we get directly from the sun. If the sun had a flavor, I definitely think it would be berries or tomatoes. Or both. But even if that is what the sun might taste like, these fruits do not contain vitamin D. And so we who live up north must take supplements to help keep our mood and spirits up during our long winters. Fortunately, we have ways of preserving the delicious taste of the summer sun such as canning.

One of my favorite way of preserving tomatoes is when they are slow roasted in the oven and packed in oil. So delicious! I have oven roasted tomatoes before myself, and the result is as close to candy as tomatoes can get. If I don’t have time to roast fresh tomatoes, or if I can’t get my hands of good fresh tomatoes, sun dried tomatoes are just as good. Recently, I decided to come up with my own version of a vegan sundried tomato pesto. It is suuuuper delicious. Especially tossed with pasta or spread on baguette. I could eat it everyday, especially every cold winter day to remind me of the tastes of summer!

Ingredients

  • 1 generous cup oil packed sun dried tomatoes
  • 5 cloves garlic cloves
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup packed fresh flat leaf parsley
  • ½ cup slivered almonds
  • ½ teaspoon red pepper flakes
  • approx. 1/3 cup extra virgin olive oil (I used the oil in which the sun dried tomatoes were packed)

Directions

  1. Place tomatoes, garlic, salt, pepper, parsley, almonds and red pepper flakes in food processor. Pulse until ingredients start turning into a paste. Slowly add the oil until desired consistency is reached.
  2. Spread on baguette, sandwiches, or serve tossed with your favorite pasta.
  3. Enjoy!
