Taste the rainbow…isn’t that a slogan from Skittles? That super sweet candy? I seem to remember commercials during Saturday morning cartoons (Throw back! Are Saturday morning cartoons even a thing anymore?) of candy raining down from the sky that were the colors of the rainbow. Well, I hate to say it Skittles, but if the rainbow tastes like anything, it has to be these super colorful spring rolls.

Summer veggies are in full swing here in Minnesota and I am excited about it. During those hot, hot summer days when you don’t want to cook and you roll your eyes at the thought of another salad? These are perfect. All you need is some warm water and a knife; no stove top of oven time needed!

For these beautiful spring rolls, I wandered through the produce section of our location co-op to pick up some fresh summer veggies. Pro-tip while shopping: when you want something like cabbage for you don’t need one the size of your head, ask the produce grocer to chop it in half for you. They will do it and then you don’t get way to much! Win. I still have way more cabbage than I needed for this recipe, but it’s a manageable amount.

Wrapping these spring rolls with rice paper is a delicate art. It’s not easy to make them look “perfect” and I am here to tell you that perfection doesn’t exist and in fact doesn’t matter. All you should care about is getting them rolled tightly enough so that the veggies don’t all fall out when you cut the rolls in half.

Make sure you don’t soak the rice wrapper for too long. They can easily turn into a pile of rice mush. Don’t worry if it take you a few tries to get the hang of it. I ruined the first one I attempted when making these. And although I could have rolled mine tighter and perhaps made them a little longer, they were perfectly delicious. In fact, I might make them again today for my lunch.

Ingredients

  • 1 carrot, peeled and julienned
  • half of a cucumber, seeded and julienned
  • one bell pepper, cored and julienned
  • 3 radishes, sliced
  • 1/8 of a purple cabbage
  • yellow summer squash, julienned
  • spring roll wrappers
  • bunch of cilantro
  • spicy peanut sauce
  • ¼ cup water
  • 1 tablespoon sriracha
  • ¼ creamy peanut butter (I used organic natural-so sugar added)
  • 1 tablespoon soy sauce
  • 1 tablespoon agave (or honey for a non-vegan version)

Directions

  1. Prepare all veggies and set side.
  2. Fill a shallow pan with warm/hot water. One at a time take spring roll wrappers and soak for about 15 seconds, or until soft.
  3. Place the soft wrapper on a plastic cutting board or plate. Place a few of each of the prepped veggies and cilantro in the middle of the wrapper. Fold and wrap as tightly as you can. Set aside and start next roll and by soaking the wrapper, etc.
  4. For the sauce, place all ingredients in bowl and whisk together.
  5. Garnish rolls and sauce with sesame seeds if desired.
  6. Enjoy!
