Psst! You guys…it’s finally here! Karl and I were taking a little stroll through the park behind our place the other day and I saw them-for real. Little tiny sprouts of green coming up from the earth of the tips of tree branches. YAY! It always amazes me when life pops up seemingly overnight in the spring. Besides opening windows to let in a warm breeze, letting the delicious golden sunshine pour over my vitamin D deprived skin, and taking walks without being all bundled up, what am I the most excited about? Food, of course! 😉 Spring veggies are making an appearance in the store, and this is the first thing I came up with this season: Roasted Asparagus Radish Pearl Couscous Salad. Mmm!

Roasting veggies is such a great way to get more veggies into your diet. And they are fantastic in every season. Once you have roasted veggies a few times, you will see a pattern. Pretty much chop the veg into similar sized pieces, toss with some olive oil, salt and pepper, and possibly some minced garlic and herbs then spread out evenly onto a baking tray-be sure not to crowd the pan too much! Roast in a 425 F oven for about 15 minutes, then check every five minutes to see if the veggies are cooked through and starting to crisp. That should do it!

One thing you should pay attention to is to which vegetables you are roasting. When doing a mixed veggie dish, either roast them all separately, mix them if they have similar roasting times, or start with the veggie that need the longest times and then add the ones that need shorter amount of time later on in the roasting process.

While I love roasted veggies all by themselves, I also like mix in other delicious things to create even more nutritious and delicious ensembles. Grains, toasted nuts, fresh fruit, dried fruit, pasta, rice…the possibilities go on and on! The more that you cook and pay attention to what works and what flavor combinations you like, the easier it will become.

Roasted Asparagus Radish Pearl Couscous Salad

Ingredients

  • 1 lb. small red radishes, washed and halved or quartered to achieve equal size
  • 1 lb. asparagus, washed and chopped into equal lengths with tough ends removed
  • 1 medium shallot, minced
  • 4 cloves garlic, minced
  • salt and pepper to taste
  • 3-4 tablespoons olive oil
  • zest and juice of one lemon
  • 1 teaspoon dry dill weed or 3 fresh
  • 1 cup pearl couscous, cooked according to package directions

Directions

  1. Preheat oven to 400 F.
  2. Toss radishes and asparagus with 1 or 2 tablespoons olive oil, shallot, garlic, and salt and pepper to taste. Spread about on baking sheet, giving plenty of space to the veggies. Roast for about 30-35 minutes. Check every five minutes or so after the first 15 minutes to be sure that they are not over done.
  3. Prepare the couscous according to directions and set aside.
  4. Whisk together 2 tablespoons olive oil, lemon juice and zest, a little salt and pepper, and dill weed.
  5. Toss veggies, couscous, and dressing together.
  6. Serve warm or room temp. Enjoy!
