Just a few short weeks ago, life was so different. I had my hopes and dreams for how my birth story would go…knowing full well that I probably wouldn’t get them. At least not all. Well, my little man decided to show up-I kid you not-on the exact day that I hoped that he would. The birth went almost exactly how I had hoped it would. (If only we could have figured out how to move his little fist away from his face!)

The week before Eddie was born, I was 38 weeks pregnant with a huge list of things I wanted to get done. I cooked, baked, photographed recipes, and prepped for my pottery sale. I wasn’t crazy enough to book any weddings to photograph in the final months of my pregnancy…but I agreed to sell my pottery at the Nordeast Minneapolis Art-A-Whirl!

In my defense, I don’t think it was all that crazy. I had people lined up to be there in my stead should I have gone into labor. Fortunately, I didn’t! And had a very successful sale. Yay!

One of the recipes I had insisted on getting made and photographed right before Eddie was born was this one. Yes…another rhubarb recipe. I can’t help it, you guys! Tis the season and I love rhubarb. I love it! So much that I made more of this jam and I also made these muffins again just a couple of weeks ago.

The pairing of almonds with the tart rhubarb make for a fantastic flavor combination. I made my glaze pretty runny. Next time, I will add less liquid so I get more of an icing consistency. I recommend adding liquid to the powdered sugar just a little bit at a time until you get the consistency that you want. You will likely need less liquid than you think, so be careful!

Ingredients

  • 1 cup all purpose flour
  • 1 ½ cups whole wheat flour
  • ½ cup white sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter, frozen and grated
  • 2/3 cup almond milk
  • ½ teaspoon almond extract
  • 1 egg
  • 1 ½ cups chopped rhubarb
  • ½ cup slivered almonds
  • ¾ cup powdered sugar
  • 1-3 teaspoons almond milk
  • ½ teaspoon almond extract
  • ¼ cup toasted slivered almonds

Directions

  1. Preheat oven to 375 degrees F and prepare baking sheet by covering with parchment paper.
  2. Mix together flours, sugar, baking powder, salt and frozen grated butter..
  3. In a separate bowl, whisk together almond milk, almond extract, and egg. Slowly stir into dry mixture.
  4. Fold in chopped rhubarb and slivered almonds.
  5. Pour dough onto a floured surface and shape into a single round and cut into eight scones.
  6. Place scones onto prepared baking sheet. Bake 18-25 minutes.
  7. Place baked scones onto racks and let cool completely.
  8. While scones cool, toast slivered almonds and make glaze. To make glaze, slowly stir almond milk and almond extract into powdered sugar. For more of an icing, use less liquid.
  9. When scones have completely cooled, glaze and sprinkle toasted almonds on top.
  10. Enjoy!
