This simple miso soup with shiitake mushrooms and baby bok choy is the perfect thing to throw together in between all of those holiday parties this month!

Yesterday, Eddie and I were busy. Busy in the best sense. Now that he is six months old (this age is SO FUN, you guys!!!) we decided to join the local YMCA so we can take him swimming. He just loves it! As days shorten and winter descends upon us, I was searching for ways to get out of the house and get some more activity into our days.

After we went swimming, we went to the new mama group that is led by the amazing doula who taught the birth class that my husband and took before Eddie was born. One of the questions she posed to us new mamas yesterday was what is it that we want and what is it that we need right now.

Well, my was last post was about cookies. Christmas cookies, you guys! I can’t stop thinking about them! I was good and I gave most of those molasses cookies away, but I have plans to make more cookies in the very near future…I mean, it is December now after all. Bring on the Christmas cheer, I say!

So what is it that I want right now? Cookies. I want all the Christmas cookies in my face. Right now. What is it that I need right now? More exercise. Ha! It’s a good thing that we joined the Y because I need to do more than just floating about in the shallow pool with Eddie a couple of times a week.

These taste buds of mine need to calm the heck down and remember that culinary life also has a savory side. This soup is the perfect thing to throw together amidst of the crazy business of the holiday season. It’s simple, healthy, and delicious. Just right for detoxing the body in between all of the holiday parties and super rich food that is surrounding our holiday lives right now.

Miso Soup with Shiitake Mushrooms and Baby Bok Choy

Ingredients

  • 6 cups veggie or mushroom broth
  • 1 tablespoon grated ginger
  • 2 tablespoons tamari or soy sauce
  • 6 shiitake mushrooms, sliced
  • 6 baby bok choy, halved or quartered
  • 1 block extra firm silken tofu, cut into small cubes
  • 4 tablespoons miso (I used red)
  • sesame seeds, garnish
  • scallions, sliced for garnish
  • toasted sesame oil, for garnish

Directions

  1. Place broth, ginger, and tamari or soy sauce is a pot over medium heat.
  2. Place mushrooms and baby bok choy in simmering broth. Let cook about ten minutes.
  3. Gently stir in tofu. Cook a few minutes until warmed.
  4. Turn off heat and stir in miso. Don’t add the miso too soon or when the soup is too hot (boiling). This will kill the healthy probiotics in the miso paste.
  5. Serve in bowls and top with garnishes.
  6. Enjoy!
