It’s true, Spring has sprung (well, is in the process of springing) in Minnesota. Pretty green things are juuuuust barely popping out of the ground. Every now and then, the sunshine warms up the day enough to tease us with what is to come. Still, when I venture outside, I take the precaution of a jacket and sometimes a scarf. Soon, I shall break out my Birkenstock sandals. Hallelujah! That day can’t come soon enough. (Said the 32 week pregnant lady!) Salads are making more appearances these days on our menus, but still, some days call for soup. Like this one. Kale quinoa cannellini bean tomato soup is vegan-super healthy, fast and delicious.

We have had just a handful of days I considered to feel legitimately like spring. The kind of Minnesota spring that instantly brings patios, grills, and cold delicious craft beers to mind. (Only a few short months until I can have some Surly Furious. Yay!) As the scales tip in favor of warmer weather, we still do have our fair share of cooler and, I’ll say it, dreary weather. It is days like that that call for soup.

And some days, you need something fast and easy. This hearty soup fits the bill. Save time with canned beans and canned tomatoes-though you could absolutely start with dry beans and chop up fresh tomatoes if you have time and would like to. Fresh tomatoes will not be as saucy, but I am sure it would be equally delicious.

Another note, I used lacinato kale though you can absolutely use regular curly kale if you would like to. Lacinato kale, which is said to have a long history in traditional Tuscan cuisine (hence why it’s sometimes called Tuscan Kale), does have a bit of a different texture and flavor. The curly type kale is tougher and said by some to be slightly more bitter. But again, I do think it would work if you can’t get your hands on some lacinato kale.

Here’s the recipe:

Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, thinly sliced
  • 1 cup quinoa, rinsed
  • 32 oz veggie broth
  • 2 cups water
  • 1 28 oz can fired roasted diced tomatoes
  • 1 bunch lacinato kale, washed, deveined, and chopped
  • salt and pepper to taste
  • 1 14 oz can Cannellini beans
  • flat leaf Italian parsley, chopped for garnish

Directions

  1. Heat the olive oil in a pot over medium heat, being careful to to overheat. Add the sliced garlic and sauté briefly. Stir constantly until garlic turns golden brown.
  2. Add the quinoa, veggie broth, water, and tomatoes. Simmer about 15 minutes.
  3. Stir in kale, cannellini beans, and cook through until warm. About 3-5 minutes.
  4. Add salt and pepper to taste. Garnish with chopped Italian parsley and enjoy!

Notes

Be sure to remove the tough kale stems!
