These homemade garlic herb croutons are a cinch to make. I don’t know why making my croutons at home never occurred to me until recently. Making pasta at home? Yeah, it was understandable why it took me awhile to get around to that one. Making croutons though? It’s obvious. A no brainer, really. It takes all of two minutes (depending on how fast you can mince garlic!) to throw together and another 15 to bake, less if you don’t want them super crunchy. You can level up any mundane salad in fewer than 20 minutes, you guys. Prep the croutons and while they bake prep the rest of your salad. Easy peasy.

Or just skip the salad and eat the croutons like popcorn. Whatever. Just don’t throw away that old bread! Those old, stale, half eaten loaves of French bread or baguettes? Don’t waste them! They can live a beautifully delicious second life as croutons. And they are so, so much better than store bought croutons. There is no comparison. At all. Also, they make your kitchen smell DELICIOUS while they are baking.

Any type of old bread will work. I have made them with all different types. Whole wheat, multigrain, French…anything you have sitting around should do the trick. Depending on the type of salad you have planned, feel free to explore with different seasonings. I tend to eat lots of Italian flavors in salads, so I went with the Italian seasoning and added some hot red pepper flakes for an extra kick. Leave them out if you aren’t partial to heat!

Homemade Garlic Herb Croutons {vegan}

Ingredients

  • Day old bread (I used French bread here)
  • ¼ cup olive oil
  • 6 cloves minced garlic
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes (optional)

Directions

  1. Preheat oven to 400 F.
  2. Chop up bread to approximately one inch cubes. Toss well with remaining ingredients.
  3. Spread over baking sheet. Bake for about 15 minutes. Stir every five minute or so.
