I’ve mentioned before about trying to distinguish the line between foods like muffins and cupcakes. Banana bread and cake is a similar debate in my brain. It’s like a treat…especially when you mix in chocolate chips and nuts and then eat it warm with butter melted on top. (WHOA. So good!) But on the other hand, it’s a totally acceptable breakfast food.

My in-laws have a fantastic banana cake recipe that they like to make for birthdays. It tastes like banana bread with frosting. So is frosting what helps it towards being more cake-y than bread-y? That and probably more added sugar. This recipe I came up with is still a delicious treat, but I would say leans more in the bread-y direction of this line. It’s pretty healthy. And it’s totally vegan and plant-based goodness.

I didn’t add any extra nuts or dried fruit (or chocolate) to this recipe, although you totally could. The whole wheat flour and the flax seed add some good fiber and extra nutrients. It’s moist and perfectly delicious by itself but it would also be great with butter, peanut butter, or almond butter on top. Go crazy and top it with peanut butter and sliced fresh banana for a pretty and delicious treat!

Ingredients

  • 1/3 cup coconut oil, melted
  • ½ cup maple syrup
  • 2 flax eggs
  • 2 large ripe bananas, mashed
  • ¼ cup almond milk, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¾ cups whole wheat flour
  • 3 tablespoons whole flax seed, extra to sprinkle on top
  • optional: ½ cup nuts or dried fruit

Directions

  1. Preheat oven to 325 degrees F. Grease a 9x5x3 inch loaf pan.
  2. In a mixing bowl, stir together melted coconut oil, maple syrup, flax eggs, mashed bananas, milk, and vanilla.
  3. In another bowl, stir together baking powder, salt, and flour.
  4. Gently mix together the wet and dry mixtures. Fold in the flax seeds.
  5. Pour batter into prepared loaf pan. Sprinkle extra flax seed on the top of the loaf.
  6. Place in oven and bake 55-60 minutes or until a knife comes our clean when poked into the center of the loaf.
  7. Let cool in oven for at least ten minutes before transferring to a cooling rack. Let completely cool before slicing, otherwise the bread is much more likely to crumble.
  8. Enjoy!
