Somehow, it happened. 2017 shot by faster than any year to date for me. I completely blame this on the fact that I had a child. I blinked and he went from being a squishy little newborn to a nearly seven month old with teeth and a strong will to crawl, though he hasn’t quite figured that out yet. Which is fine with me. He can take his time as far as I’m concerned! (Waiting to baby-proof until the last possible minute? Yup, that’s me!)

Christmas has always been a favorite time of the year me. Now with a baby, it’s even more fun! Yes, there is lots to be done. Yes, the hustle and bustle can get to be a lot. But I find so much joy in the time we get to spend with our loved ones! The Christmas music we share, the decorating, and of course, the food.

Unsurprisingly (my blog is a food blog after all), my favorite festivity is all of the cookie baking and special food making. It’s so fun! I have countless Christmas memories of the huge Christmas cookie baking extravaganza that took place every year at my grandmother’s home. It was the best of times! I lost count of all the different sweets we made.

My favorite cookie of all was the sugar cookies-painted with dyed egg yolks, not frosted! Dipping them in a mug of either milk or hot cocoa every evening at Christmas time was the best! They tasted especially good after coming in from ice skating on the lake at Grandma’s. My cousins and I would all inhale as many cookies as the adults would allow. It was heaven.

There is just something so delightful about special treats to dip into a warm drink. As an adult, I will for sure not say no to hot cocoa and cookies, but I also love a good scone and a cup of French press black coffee now, too. Which also happens to be more acceptable as a breakfast food. 😉 These scones are Christmas morning perfection, you guys. I tested them on my family and the were gone in the blink of an eye! They make a perfect addition to any Christmas brunch.

Cranberry Orange Walnut Vegan Scones

Ingredients

  • 2 cups all purpose flour
  • ¼ cup sugar
  • 2 ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon orange zest
  • 1 stick (1/2 cup) frozen vegan Earth Balance butter
  • 1 cup raw cranberries, chopped
  • ½ cup chopped walnuts
  • 2 flax eggs
  • ¼ cup almond milk
  • ¼ cup orange juice
  • 1 teaspoon vanilla extract
  • glaze
  • 2/3 cup powdered sugar
  • 1 tablespoon orange juice
  • ½ teaspoon orange extract

Directions

  1. Prepare flax eggs and set in fridge to chill.
  2. Preheat oven to 400 degrees F. Line baking sheet with parchment paper.
  3. Mix together flour, sugar, baking powder, salt, and orange zest.
  4. Grate the frozen vegan butter or regular butter in a cheese grater. Stir in dry ingredient mixture.
  5. Stir cranberries and walnuts into dry mixture.
  6. In a separate bowl, stir together flax eggs, almond milk, orange juice, and vanilla extract.
  7. Gently stir wet mixture into dry mixture. Stir until just mixed.
  8. Turn dough out onto a floured surface. Knead lightly only until dough comes together and stays-over working the dough will result in tough scones.
  9. Form dough into a round and place onto prepared baking sheet. Use a sharp knife to cut halfway down into eight equal wedges. Bake for 13-15 minutes.
  10. Take out and completely cut apart the eight wedges. Bake another 3-5 minutes.
  11. Place scones on cooling racks. Meanwhile, prepare the glaze. Whisk together the powdered sugar with the orange extract and orange juice. Be sure to add the juice only a little at a time so that you can be sure to achieve the proper consistency. Don’t add too much juice or the glaze will become too thin.
  12. Use a spoon to drizzle the glaze over the cool scones and enjoy!

I used Earth Balance vegan baking sticks, and they worked beautifully!
