I was never really one to eat cereal for lunch or dinner when I was in college; I solidly kept my cereal consumption to breakfast time. Several of my friends however, did eat cereal all throughout the day: breakfast (obviously), dinner, or as a late night snack. I totally get the appeal: it super easy, no cooking involved; just pour into a bowl cover with milk and boom, ready to go. Or if you’re really in a rush, just eat it dry out of the box.

As a kid, I was definitely partial to the dessert cereals. You know the ones; they claim to be fortified with this that and the other thing and yet are completely LOADED with sugar. (Newsflash! Just because a something says it’s fortified with something like calcium doesn’t mean that it’s actually good for you!)

I never eat those sugar-laden cereals anymore. If at all, I might get them to use in a dessert for fun but certainly am past the point of eating them for breakfast. Now, I much prefer a hearty bowl of steel cut oats and on a day that calls for cold cereal: homemade granola.

This granola is perfection by itself, on top of yogurt, or as a topping to a smoothie bowl. I wasn’t looking to make anything super fancy; just something simple, healthy, and delicious. The cinnamon is the perfect accompaniment to the toasted pecans. Yum! Now that I think of it, this granola would be amazing on homemade cinnamon apple sauce or on top of an apple streusel pie. The possibilities are endless!

Cinnamon Pecan Granola {vegan}

Ingredients

  • 4 cups rolled oats
  • 1 cup pecans, chopped
  • 2 tablespoons chia seeds
  • 2 tablespoons flax seeds
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 2/3 cup maple syrup (or honey for non-vegan version)
  • ½ teaspoon vanilla
  • 3 tablespoons coconut oil

Directions

  1. Preheat oven to 325 degrees F.
  2. In a large bowl, stir together the rolled oats, pecans, chia seeds, flax seeds, salt, and cinnamon.
  3. Melt the coconut oil with the maple syrup or honey and stir in the vanilla.
  4. Pour over the oats mixture and stir until completely combined.
  5. Spread out evenly on a baking tray. Bake for 20-25 minutes, stirring every 5-10 minutes to ensure even baking.
  6. Let cool and enjoy!
