Mostly, I eat very well. By well, I mean healthy. A large variety of whole grains. Lots of vegetables. Lots of fruit. Hardly any fats and sugars. Hardly any heavily processed foods. Mostly, anyway. But sometimes…life calls for ridiculous milk shakes. Especially when you are eight months pregnant, have chocolate ice cream, and it also happens to be the right season for Girl Scout cookies. WIN. This chocolate mint cookie milk shake had to happen.

Back several years ago when Karl and I were dating, I remember there was a marketing campaign by Dairy Queen for Girl Scout cookie blizzards. Oh, what an unholy alliance! How can one resist?! If I remember correctly, they had two versions: the tagalong/peanut butter patty and the thin mint. We had to try both and honestly, I could not choose a favorite. How can you? Both such winning flavors.

I must say, the only improvement that could have been made would have been swapping the vanilla ice cream with chocolate. But I suppose that is personal preference. Not that I have anything against vanilla-I love vanilla ice cream. But sometimes life just calls for more chocolate. Well, my life does, anyway.

So, obviously, I just had to make my own! With plenty of chocolate. Now one thing about recipes like these is that I don’t even think a recipe is really necessary. All you really need to do is throw things into a blender and add a little more this or that until you have the amount and consistency you desire.

One thing I should mention is that I wanted the cookies to stay in bigger chunks. So I decided to chop them up separately and stir them in after the shake was blended. Yum!

Yields 2 servings

Triple Chocolate Mint Cookie Shake

Ingredients

  • 5-6 large scoops of chocolate chocolate chip ice cream
  • 1/2-1 cup milk
  • 1/4 cup chocolate syrup, with more for top if desired
  • 6-8 chocolate mint cookies, chopped up
  • chocolate chips, for garnish

Directions

  1. Chop up the cookies so they will be ready to stir into the shake.
  2. Put ice cream, milk, and chocolate syrup in blender and blend until desired consistency is achieved-adding more ice cream or milk as necessary.
  3. Stir in the chopped up cookies, pour into two glasses, and garnish with extra cookie crumbles and/or chocolate chips.
  4. Enjoy!

Notes

If Girl Scout thin mint cookies are not available, use any cookie you would like. The Back to Nature brand has great fudge mint cookie that would work as a fantastic alternative!
