Well friends, we made it. Thanksgiving has passed. Christmas is going to be here in the blink of an eye. Of all the months, December passes the quickest for me. A few short weeks to do the all of the shopping, attend all of the parties, do all of the decorating, and wrap all of the presents.

Deep breaths. It’s a lot to do. I get it. But let’s calm down and think about the cookies. If you are someone who has to make a zillion different types yourself, makes one kind and does a cookie exchange, or simple buys Christmas cookies, it’s all good. All of these things result in eating delicious cookies, likely accompanied by some hot cocoa.

I have many favorite Christmas cookies…I can have multiple favorites, right? Five is ok, …yes? Painted (not frosted!) sugar cookies, spritz, nutmeg logs, date pin-wheels, and molasses cookies. I cannot choose. They are all so good!

I decided to tweak the classes molasses spice cookie recently. Challenge: make them fully plant-based. Also, add nuts. (As far as I am concerned, pecans can improve just about any cookie out there!)

These little cookies gems are super full of Christmas spice! Be careful to not over bake them, otherwise they will get crispy. That’s no good, unless you prefer crispy to chewy cookies. In which case, go for it. Also, let them fully cool on the baking sheets before moving them. They might pull apart a bit if you move them before they cool completely.

Chewy Vegan Molasses Spice Cookies

Ingredients

  • ½ cup shortening
  • ¾ cup brown sugar
  • 2 teaspoons vanilla
  • 2 flax eggs (see link above recipe)
  • ½ cup molasses
  • 1 teaspoon almond milk
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground allspice
  • ½ teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • ½ cup chopped pecans
  • granulated sugar for finishing

Directions

  1. Cream together the shortening and sugar in a mixer. Add in the vanilla, flax eggs, molasses, and almond milk. Blend together.
  2. In a separate bowl, mix together the flour, baking soda, salt, and spices. Gently fold the dry mixture into the wet mixture.
  3. Stir the chopped nuts into the cookie dough.
  4. Cover and chill for several hours.
  5. Heat oven to 350 degrees F.
  6. On a greased, silicon lined, or parchment paper lined baking sheet, drop balls of dough using two spoons. Sprinkle with granulated sugar. Bake for 10-12 minutes.
  7. Let cool completely before taking off cookie sheets otherwise they will break apart.

Notes

Note: I found that I liked baking them in the silicon lined baking try the best. They start to burn more quickly on a bare baking sheet or a parchment lined baking sheet.

Also, these are very chewy and moist cookies. they tend to stick together if they are stacked up when stored. My recommendation is to share them and eat them quickly! You could also try placing wax paper in between them to store to help prevent sticking.

Makes about 3 dozen cookies.
