Broccoli Artichoke Heart Pasta

Pasta is one of those foods that will never get old for me. Growing up, we usually had the stereotypical spaghetti with a tomato and meat sauce. I loved it. Now, in addition to not eating meat anymore, my taste buds have expanded when it comes to pasta. (And most things, for that matter.) Like this delicious broccoli artichoke heart pasta. So hearty, delicious, and simple!

I would say that most people I know don’t have a lot of time to dedicate to cooking each night. It’s so nice to have a few recipes like this. So easy, nutritious, and delicious. Bonus that only a couple of the ingredients aren’t staples! So it also makes for a short shopping list, which is also a bonus.

It’s hard to say where I got the idea to make this pasta…I think it was probably one of those recipes where I just looked to see what I had in the kitchen and threw it together. And it was a winner! It’s amazing how much more creative I can be in the kitchen the more I practice with creating recipes. A fun challenge if ever there was one. At least for me.

For extra protein and nutrition, feel free to add a can of cannellini beans, pine nuts, or some sautéed veggies like mushrooms or sun dried tomatoes. For a fully plant-based/vegan option, simply omit the parmesan cheese or use a vegan version. Easy!


Broccoli Artichoke Heart Pasta

  • 3 small heads broccoli, finely chopped
  • 1 12 oz jar marinated artichoke hearts, finely chopped
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • shredded parmesan, optional
  • hot pepper flakes, optional


  1. Finely chop the broccoli and artichoke hearts. You can do this by hand or using your food processors or high powered blender.
  2. Boil a pot of salted water. Cook chopped broccoli until tender, about 10-15 minutes. Remove from water and set aside, reserve about ½ cup cooking liquid.
  3. Heat oil in sauce pan over medium low heat. Sauté garlic for about two minutes. Add chopped artichoke hearts and heat through. Add broccoli and cooking liquid. Mix well and season with salt if desired.
  4. Toss with cooked pasta of choice and serve.
  5. Enjoy!
