People love to offer advice, don’t they? Lots of times, I don’t mind. Especially if I am close to the giver of wisdom/advice. Being pregnant, however, I have discovered that suddenly, your connection to the giver of advice doesn’t matter. People who don’t even know you loooove to offer unsolicited advice.

Fortunately, I haven’t had to deal with this too often. I have my tiny group of people who I talk to about certain things, and that’s all I need. And from these few conversations, came some excellent advice. One of my favorite pieces of advice? Fill your freezer with fully prepped meals before baby arrives.

Of course it is nice when friends and family can bring over meals or send you gift cards for meals, but I didn’t want to fully rely on that in the weeks following baby’s arrival. I have always been someone who loves to prepare as much as I possibly can so I got right to work on project fill the freezer.

I stuck to simple meals like curry, pasta sauce, and soups. And while freezer meals definitely have their time and place, I do prefer cooking fresh when I am able. Especially when I get to eat delicious in season produce! Recently, I have been on a major asparagus kick (yay, spring!) and came up with this deliciousness. A friend made risotto for me once last summer using buckwheat instead of the typical Arborio rice and I have been thinking about it ever since!

And so, finally, I decided to make up my own version of a risotto using buckwheat. And spring seemed like the perfect time to feature some of the delicious veggies that come with it. Ta-da! I present you with asparagus fennel buckwheat risotto. It also happens to be vegan and gluten-free, if you care about such things. Not to mention delicious and healthy!

Ingredients

  • 4 cups veggie broth
  • 2 tablespoons olive oil
  • 1 lb asparagus, chopped into pieces
  • 4 cloves garlic, minced
  • 1 medium yellow onion, finely chopped
  • 1 ½ buckwheat groats (I know, I know. I didn’t name them that!)
  • 1 tablespoon dry Italian herbs
  • 1 tablespoon white wine vinegar
  • 1 lemon, juice and zest
  • 1 large fennel bulb, chopped
  • salt and pepper to taste
  • fresh Italian parsley, chopped for garnish

Directions

  1. Bring vegetable broth to a boil in a sauce pan and reduce to a simmer.
  2. Heat one tablespoon olive oil, gently sauté asparagus and fennel until just tender, but maintains slight crunch. Remove from pan.
  3. In same pan, add second tablespoon of olive oil, and onion and sauté until soft. Add garlic and sauté another minute or two. Stir in buckwheat, dried herbs, white wine vinegar, and lemon juice. Stir until well-mixed.
  4. Add vegetable broth little by little, stirring continuously. The goal is to have the buckwheat slowly and evenly absorb the liquid.
  5. When the broth is fully absorbed, taste and adjust the seasoning if needed. Gently stir in the asparagus, fennel, and lemon zest.
  6. Garnish with fresh parsley and parmesan cheese, if desired.
