Bagels are one of those things that initially seemed to me too difficult to make at home. For whatever reason they seemed too complicated. I never even considered making them myself until I heard that one of my younger brothers had made some-and successfully, too! While my husband and I were still living in Japan, I decided to go for it and give them a shot. That is when I first tried this pumpkin spice bagel recipe.

My first time resulted in soggy, sloppy, disgusting globs of dough. Mystified as to what had gone wrong, I reread the recipe and discovered, unsurprisingly, that it was my mistake. I had boiled the bagels ten minutes on each side instead of one. Ten FULL minutes! The bobbed around in boiling water for twenty minutes total. Whoops. No wonder they got a little soggy. Lesson learned: Read and REREAD the recipe IN FULL before you even start! This isn’t the first recipe gone awry for me…and I am sure it won’t be the last! 😉

I know that this is more of an autumn recipe…and I totally meant to post it a few months ago but the universe had other plans for me at that time. (See previous post for more details on that front!) Regardless, I still want to share it with you. I love making bagels and flavoring them in different ways depending on what I have on hand in my fridge and cupboards and what season it happens to be. Speaking of which, I should come up with a good winter seasonal bagel!

Pumpkin Spice Bagel Recipe

Naturally, this means pumpkin bagels in the autumn! Whip together some plain cream cheese with some cinnamon sugar in your mixer, and you have a perfect breakfast or snack. Delightful! This pumpkin spice bagel recipe is something I will look forward to each and every fall season!

Ingredients

  • 5/8 cup warm water
  • 1/2 cup pumpkin puree
  • 2 T honey
  • 1 t salt
  • 2 t pumpkin pie spice
  • 1 1/2 t cinnamon
  • 3 1/3 cups bread flour
  • 2 t active dry yeast

Directions

  1. Mix flour, water, salt, honey and yeast. Knead, let rise for an hour.
  2. Separate dough into six sections and shapes into bagels. (I knead the dough into a small ball then poke a hole through the middle with your finger to form the hole.)
  3. Allow formed bagels to rise for 20 min. Prep your pot of boiling water.
  4. Drop the bagels gently into the pot of boiling water for about 1 min per side.
  5. Place on a baking sheet dusted with cornmeal.
  6. Bake at 400 F for 20-25 min.
